I think plastic ones that have no sentimental value to you (and you no longer have the car), let them go. Nice ones that you do have sentimental value (and you no longer have the car) keep. Any trophies related to cars you still have, I’d suggest keeping. They tell an interesting part of its story.
What to do with all of them…….. the bottom has fallen out of big old antique buffet/China cabinets. People have to almost give them away to get rid of them. Stuff like your trophies looks nice in them. Simple LED light solutions can be put in them and they live again as a nice display. My wife has her grandmother’s old curved glass large display cabinet. It is special because she loved her grandmother and is pretty, but she doesn’t want to put it in our home, and she can’t let it go…… it has stayed and holds radiator hood ornaments I’ve picked up over the years. Grab a couple of those and display the trophies you keep. they are still interesting. And you can do this in the new 6K square foot shop you should build.
