I love everything about this 1935 Ford. The color, the upholstery, engine bay. I wouldn’t change a thing. No crazy paint, no Chevy crate engine etc.

Because tastes, regional preferences, knowledge, wallets and talents differ. Its always about the owner and what he wants and in the final analysis it is "his" car. I certainly wouldn't want everyone collecting, restoring, modifying etc exactly "my way".
I totally agree with you. I should clarify my point. There’s a big difference between doing something to someone’s own taste and doing something tastefully. If something is done tastefully, it can be appreciated even by those who wouldn’t normally find it their cup of tea.
Like architecture and art in general there are some universal rules of car esthetics that have to be followed. Hard to define, but easy to see when they are missing.
Exactly. The best examples of this that I can think of are the Tesla model S and the Cybertruck. You’ll find people that love or hate either of them, but only one of them is styled tastefully.
